If the tanned or vegetilized leather products are so sensible how can I identify easily this material?

First of all is important to know that leather is animal skin that went through a stabilization process named tanning. The most used leather come from the bovine, swine or caprine and can be roughly divided in three big groups according to its finishing (or texture):

 

plain leather (with more or less shining intensity and more or less showed texture;

chamois like leather (with a velvet touch and apparent fibers with more or less length);

greasy leather (more structured and use do make boots and shoes for outdoor use.

If the water absortiuon is too fast, probably the material is tanned or vegetalized leather.
